Abstract
สารนิพนธ์ฉบับนี้มีวัตถุประสงค์ในการศึกษาปัญหาความคลาดเคลื่อนของวัตถุดิบคงคลังบริษัทแปรรูปอาหารแช่แข็ง ที่ส่งผลกระทบต่อแผนการผลิตทำให้ไม่สามารถผลิตสินค้าได้ ต้องขอเลื่อนแผนการส่งออก ทำให้ระดับความพึงพอใจของลูกค้าลดลง การศึกษาปัญหาใช้วิธีวิเคราะห์กิจกรรมในกระบวนการไหลของวัตถุดิบแต่ละแผนกที่มีส่วนเกี่ยวข้องจากการสัมภาษณ์ข้อมูลเชิงลึกและการสำรวจข้อมูลภาคสนามในการสังเกตการณ์แบบไม่มีส่วนร่วม ตั้งแต่การวางแผนวัตถุดิบ จนวัตถุดิบถูกผลิตเป็นสินค้า ผลจากการศึกษาพบว่าปัญหาความคลาดเคลื่อนของวัตถุดิบเกิดจากปัจจัยหลัก 2 ปัจจัย คือ 1) ปัจจัยด้านคน เช่น การบันทึกข้อมูลการรับวัตถุดิบผิดพลาด 2) ปัจจัยด้านขั้นตอนการทำงาน จากการทำงานร่วมกันหลายระบบส่งผลให้การถ่ายโอนข้อมูลไม่สอดคล้องกัน จากการศึกษาในครั้งนี้จึงได้เสนอแนะแนวทางการลดความคลาดเคลื่อนโดย 1) การนำระบบบาร์โค้ดมาใช้เพื่อลดข้อผิดพลาดในการบันทึกข้อมูลการรับวัตถุดิบและการจัดเก็บวัตถุดิบ 2) การใช้ ABC Classification ในการกำหนดวงรอบการนับวัตถุดิบและการปรับยอด 3) การกำหนดความถี่การถ่ายโอนข้อมูลอัตโนมัติของระบบให้เหมาะสม 4) การก่อสร้างพื้นที่เพิ่มเติมเพื่อรองรับปริมาณวัตถุดิบที่เพิ่มขึ้น

The purpose of this independent study is to identify problems of raw material inventory discrepancy experienced by a frozen processed food company causing production disruption, shipment delay and poor customer service. The study investigates and collects field operation data relevant to activities in the business process spanning from the planning of raw materials to the production of finished products. The study finds that problems with inventory discrepancy are basically personal-related (employee error in inventory recording) and procedure-related (due to the use of multiple but non-aligned computerized record systems). The study proposes 1) the investigation into the application of a bar code system to eliminate the inventory recording error during the receiving and put-away of raw materials, 2) the use of ABC classification to plan for cycle counting and inventory record adjusting, 3) procedures to timely synchronize the data recorded in separate systems, and 4) the construction of additional spaces to efficiently accommodate the growing stock of raw materials.
