Abstract

วัตถุประสงค์ของการวิจัยครั้งนี้ (1) เพื่อออกแบบระบบการวัดสมรรถนะทางการผลิต (2) เพื่อเป็นแนวทางใน การปรับปรุงการดำเนินงานตามระบบคุณภาพในโรงงาน ในการออกแบบระบบการวัดสมรรถนะนั้นได้ทำ การศึกษาและเก็บรวบรวมข้อมูล เพื่อสังเคราะห์เป็นโครงสร้างกิจกรรมของระบบการจัดการทางการผลิต จากนั้นได้กำหนด หน้าที่ของกิจกรรม วัตถุประสงค์ของกิจกรรม และตัววัดสมรรถนะของกิจกรรมต่างๆ เพื่อให้บรรลุตามวัตถุประสงค์ที่กำหนดไว้ และทำการศึกษาระบบมาตรฐาน ISO 22000 เพื่อใช้เป็นแนวทาง อ้างอิงในการออกแบบตัวชี้วัดด้านการจัดการระบบคุณภาพความปลอดภัยของอาหาร ในงานวิจัยนี้ได้ ออกแบบตัวชี้วัดขึ้นมา 3 กลุ่มโดยอ้างอิงจากกิจกรรมภายในกระบวนการผลิตของโรงงานตัวอย่างคือ (1) กลุ่มการบริหารทรัพยากรทางการผลิต มีตัวชี้วัดที่สำคัญ เช่น การใช้ประโยชน์จากเครื่องจักร การใช้ประโยชน์ด้านแรงงาน อัตราผลผลิตต่อวัตถุดิบ (2) กลุ่มการดำเนินการผลิตมีตัวชี้วัดที่สำคัญ เช่น อัตราความสำเร็จในการวางแผนการผลิต อัตราการเปลี่ยนแปลงแผนการผลิต อัตราการทำงานซ้ำ (3) กลุ่มการจัดการระบบคุณภาพความปลอดภัยของอาหาร ซึ่งแบ่งออกเป็น 4 กลุ่มย่อยได้แก่ กลุ่มตัวชี้วัดด้าน ความรับผิดชอบของฝ่ายบริหาร กลุ่มตัวชี้วัดด้านการจัดทรัพยากร กลุ่มตัวชี้วัดด้านการวางแผนและการ ตระหนักถึงผลิตภัณฑ์ที่ปลอดภัย กลุ่มตัวชี้วัดด้านการยืนยันการทวนสอบและการพัฒนาระบบการจัดการ ความปลอดภัยด้านอาหาร เมื่อดำเนินการวัดสมรรถนะทางการผลิตของโรงงานตัวอย่าง ศึกษาและ วิเคราะห์ถึงสภาพปัญหาได้นำเสนอแนวทางในการปรับปรุงระบบคุณภาพ 3 แนวทางคือ (1) การจัดทำ ค่ามาตรฐานของพารามิเตอร์ควบคุมการทำงานในกระบวนการผลิต (2) การจัดทำระบบควบคุมและ ตรวจสอบคุณภาพการผลิต (3) การจัดทำมาตรฐานการทำงานของพนักงาน

Other Abstract (Other language abstract of ETD)

The objectives of this research were to (1) design the performance measurement for the production system and (2) provide the guideline for improving the operation in quality system. This research was started by studying and collecting data from the production system of rice flour sill in order to synthesis the functional structure of the production system. Then, the function, objective and performance indicator of activities were defined to achieve the goal of the factory selected. Additionally the design of the performance indicators in part of food safety management was performed reference via the quality system ISO 22000 In this research, the performance indicators were classified into 3-group; (1) production resource management, for example machine and labor utilization productivity to raw materials; (2) production operation management for example success rate in production planning, changing plan rate, rework rate, and (3) food safety management. Which was divided into 4 sub-group including (1) management responsibility, (2) resource management, (3) planning and realization of sale product, validation, and (4) verification and improvement of the food safety management system The research had provided 3 guidelines to develop the operation in quality system which were to set-up (1) standard parameters to control the process operation, (2) inspection and quality control system, and (3) standard work instruction for workers.
