Abstract

เพื่อนำพาผู้อ่านให้เข้าไปในโลกของอาหาร ซึ่งนอกจากจะมีความหมายในแง่ของวัตถุที่ทำให้สิ่งมีชีวิตดำรงชีพอยู่ได้แล้ว อาหารยังเป็นสิ่งแสดงถึงความหมาย คุณค่า และระบบของการกระทำต่างๆ อีกด้วย เหตุที่เลือกศึกษา “หมูกระทะ" ก็เนื่องจากเป็นอาหารที่ได้รับความนิยมและเป็นที่ดึงดูดใจของคนที่มาเป็นกลุ่ม หรือมักจะทำกิจกรรมอื่นๆ ร่วมกันเป็นกลุ่ม ด้วยความเป็นจริงข้อนี้จึงทำให้ผู้เขียนเกิดการตั้งคำถามว่า ระบบกลุ่มที่แสดงผ่านการกินหมูกระทะนี้สื่อถึงความหมายอะไรบ้าง ความเป็นกลุ่มมีผลต่อการช่วยเหลือหรือพึ่งพาอาศัยกันอย่างไร และเหตุใดหมูกระทะจึงเป็นที่นิยมของคนที่มาเป็นกลุ่ม โดยได้เลือกใช้วิธีการทางมานุษยวิทยาที่เรียกว่า การสังเกตการณ์อย่างมีส่วนร่วม คือการเข้าไปใช้ชีวิตอยู่ร่วมกับเขา ไปทำกิจกรรมร่วมกับเขา ร่วมพูดคุย ทำงาน เที่ยว ฯลฯ ไปกับเขาประหนึ่งว่า ผู้เขียนเป็นส่วนหนึ่งของกลุ่มที่ผู้เขียนเลือกศึกษา เพื่อทำความเข้าใจถึงวิถีชีวิตของพวกเขา ผลการศึกษาพบว่า การกินหมูกระทะร่วมกันนั้นเกิดขึ้นจากสภาพสังคมที่เปลี่ยนแปลงไป การกินร่วมกันของกลุ่มที่ศึกษาเป็นการตอกย้ำระบบสังคมเมืองที่จำเป็นต้องพึ่งพาอาศัยกันทุกด้าน เช่น การหาเงินเพื่อมาหมุนเวียนค้าขาย การกู้ยืมเงินภายในกลุ่ม ฯลฯ การกินร่วมกันสามารถทำให้คนเกิดความสนิทสนมกัน และทำให้รู้สึกว่าตนเป็นคนสำคัญของกลุ่ม และที่สำคัญก็คือเป็นการทำให้ความเป็นกลุ่ม หรือการเป็นสังคมคงอยู่ต่อไปได้

Other Abstract (Other language abstract of ETD)

To lead reader into the food world which is more significance than merely maintaining physical life or necessary for biological system. The conspicuous consumption of food has always been important as an indicator of relashionship and has many social meanings. Pan Grilled Pork | a dish that people usually eat together with their group, and this dish is very It’s popular for many people who like to do their activity with their group. In addition, I use the term “Change of Consumption in Bangkok" to refer because it refer to people who live in Bangkok where consumption aspect is changed and differs from the past. In the past, people usually bought some fresh ingredients for cooking at home, but today they like to eat out as a social activity. From this study I argue that group eating like Pan Grilled Pork reflects the social relation change. Public eating is an integral aspect of urban living, and it relates to the way to earn a living in community such as the way to earn money for an investment and to contract debt etc. Eating together creates the intimacy and promotes greater unity, solidarity and trust, which are important factors in empowering a community.
