Abstract
การวิจัยครั้งนี้เป็นงานวิจัยเชิงคุณภาพ มีวัตถุประสงค์เพื่อ 1) วิเคราะห์คุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ 2) วิเคราะห์การสืบสานคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ และ 3) นำเสนอแนวทางการสืบสานคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ ผู้วิจัยเลือกศึกษาน้ำพริกแห่งอุษาคเนย์ด้วยวิธีเฉพาะเจาะจง ได้แก่ น้ำพริกกะปิและน้ำพริกปลาร้าในกรุงเทพฯ และปริมณฑล ประเทศไทย แจ่วบองในหลวงพระบาง ประเทศลาว และตึกเกรืองในพนมเปญ ประเทศกัมพูชา โดยมีวิธีดำเนินการวิจัยจำแนกตามวัตถุประสงค์ และใช้การศึกษาเอกสาร การสัมภาษณ์เชิงลึกแบบกึ่งโครงสร้าง การวิจัยภาคสนาม และการจัดสนทนากลุ่ม ผลการวิจัยพบว่า 1) น้ำพริกแห่งอุษาคเนย์มีคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรม ได้แก่ คุณค่าด้านประวัติศาสตร์และอัตลักษณ์ร่วมทางวัฒนธรรม “รสรากเหง้า” คุณค่าด้านสุนทรียศาสตร์และอัตลักษณ์ร่วมทางวัฒนธรรม “รสชาติที่เรียบง่ายแต่ลุ่มลึก” คุณค่าด้านจริยศาสตร์และอัตลักษณ์ร่วมทางวัฒนธรรม “รสน้ำใจ” คุณค่าด้านภูมิปัญญาและอัตลักษณ์ร่วมทางวัฒนธรรม “รสชาติแห่งภูมิปัญญา” และคุณค่าด้านวัฒนธรรมและอัตลักษณ์ร่วมทางวัฒนธรรม “รสชาติของวิถีชีวิต” 2) การสืบสานคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ในปัจจุบันมี 3 รูปแบบทั้งการศึกษาในระบบ การศึกษานอกระบบ และการศึกษาตามอัธยาศัย ซึ่งแต่ละรูปแบบมีองค์ความรู้ วิธีการสืบสาน ผู้รับการสืบสาน และผู้สืบสานแตกต่างกันออกไป และ 3) แนวทางการสืบสานคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ควรสืบสานผ่านรูปแบบการศึกษาตลอดชีวิต (Lifelong Learning) โดยมีสถาบันครอบครัวเป็นพื้นฐานสำคัญ ส่งเสริมการเรียนรู้ผ่านสื่อดิจิทัลและสื่อออนไลน์อย่างสร้างสรรค์ ทั้งยังต่อยอดปัจจัยที่เอื้อต่อการสืบสานคุณค่าและอัตลักษณ์ร่วมทางวัฒนธรรมของน้ำพริกแห่งอุษาคเนย์ และก้าวข้ามปัจจัยที่เป็นอุปสรรค นอกจากนี้ต้องพัฒนาเครือข่ายระหว่างบุคคล กลุ่มคน และชุมชนที่มีบทบาทเกี่ยวข้องกับน้ำพริกแห่งอุษาคเนย์เพื่ออนุรักษ์และพัฒนาวัฒนธรรมน้ำพริกแห่งอุษาคเนย์ สานสัมพันธ์และสร้างความเข้าใจอันดีต่อกันระหว่างชาวอุษาคเนย์ ตลอดจนเสริมสร้างอัตลักษณ์อาเซียนและความเป็นประชาคมอาเซียนให้เข้มแข็งอย่างยั่งยืน
Other Abstract (Other language abstract of ETD)
The purposes of this qualitative research are to 1) analyze values and collective identity of Southeast Asia’s chili pastes, 2) analyze cultural inheritance of values and collective identity of Southeast Asia’s chili pastes, and 3) present the transmission guidelines for cultural inheritance of values and collective identity of Southeast Asia’s chili pastes. The scope of this research focuses on chili pastes used as dip: Namprik Kapi and Namprik Plara in Bangkok, Thailand; Jeawbong in Luangprabang, Laos; and Tik Kreoung in Phnom Penh, Cambodia. The research methods include documentary research, semi-structured in-dept interview, field research in the areas, and focus group discussion. The research results are 1) Values and collective identity of Southeast Asia’s chili pastes are found and divided into five aspects: history reflecting identity of ASEAN roots; aesthetics reflecting identity of deep simplicity; ethics reflecting identity of kindness; wisdom reflecting identity of adaptability to harmonise with nature; and way of life reflecting ASEAN’s way of life. 2) Cultural inheritance of values and collective identity of Southeast Asia’s chili pastes is formal, non-formal, and informal education and 3) The transmission guidelines for cultural inheritance of values and collective identity of Southeast Asia’s chili pastes should be focusing on a family unit as a fundamental platform for integrating intangible cultural heritage into a lifelong learning, and promote learning through digital and online media. In order to be sustainable, adopting experiences in response to challenges and threats and strengthening networks between individuals, groups, and communities related to the Southeast Asia’s chili pastes are essential.
