Abstract
ธุรกิจรับและส่งอาหาร (Food delivery) มีบทบาทกับการใช้ชีวิตของคนในปัจจุบัน ส่งผลต่อการเปลี่ยนแปลงพฤติกรรมการรับประทานของผู้บริโภค การดำเนินธุรกิจของผู้ประกอบการร้านอาหาร รวมถึงกิจกรรมของธุรกิจที่อยู่ในห่วงโซ่ธุรกิจรับและส่งอาหาร ในช่วงปีที่ผ่านมา การแพร่ระบาดของเชื้อไวรัสโคโรนา 2019 (COVID-19) ส่งผลให้ธุรกิจรับและส่งอาหารเติบโตอย่างรวดเร็ว เนื่องจากร้านอาหารไม่สามารถเปิดให้บริการหน้าร้านได้อย่างเต็มรูปแบบ ผู้บริโภคต้องใช้แอปพลิเคชันเพื่อสั่งอาหารและเพื่อลดความเสี่ยงในการเจอผู้คน การเติบโตของธุรกิจรับและส่งอาหาร ได้ส่งผลต่อการวิถีชีวิตของผู้คนและธุรกิจโดยเฉพาะในพื้นที่เมือง ดังนั้นงานวิจัยจึงมุ่งศึกษาเกี่ยวกับผลกระทบของธุรกิจรับและส่งอาหารต่อการเปลี่ยนแปลงภายในเมือง โดยใช้ย่านอารีย์เป็นพื้นที่ศึกษา งานวิจัยนี้ศึกษาผลกระทบของธุรกิจรับและส่งอาหารต่อผู้ให้บริการร้านอาหารและผู้ใช้บริการร้านอาหารในแง่ของเศรษฐศาสตร์เมือง และนำผลการศึกษาไปวางแผนการจัดการย่านให้เหมาะสมกับเศรษฐกิจรูปแบบใหม่และวิถีชีวิตในยุคดิจิทัล วิธีการได้มาซึ่งข้อมูลเป็นการเก็บข้อมูลปฐมภูมิ ประกอบไปด้วย (1) การใช้แบบสอบถามเก็บข้อมูลของผู้ประกอบการร้านอาหาร และผู้ขับรับและส่งอาหาร (2) การลงสำรวจพื้นที่ศึกษาเพื่อดูการเปลี่ยนแปลงในระดับย่าน และ (3) การสัมภาษณ์ผู้ประกอบการร้านอาหาร โดยข้อมูลทั้งหมดที่ได้จากการเก็บข้อมูลถูกนำมาประมวลผลด้วยการวิเคราะห์เชิงสถิติพรรณนา (Descriptive Statistics) ผลการศึกษาพบว่า การให้บริการผ่านทางแอปพลิเคชันสั่งอาหารส่งผลให้ขอบเขตพื้นที่ให้บริการ (Threshold) ของร้านอาหารกว้างขึ้น ทำให้ร้านอาหารมีโอกาสได้กำไรมากยิ่งขึ้น นอกจากนี้ ประเภทธุรกิจของร้านอาหารมีผลต่อการเปลี่ยนแปลงขอบเขตพื้นที่ให้บริการและระยะทางในการเข้าไปใช้บริการร้านอาหาร (Range) เพิ่มมากขึ้น โดยพบว่าประเภทของอาหารมีความสัมพันธ์กับระยะทางในการส่งอาหาร ธุรกิจรับและส่งอาหารยังส่งผลให้ร้านอาหารสามารถเกิดขึ้นได้ทุกพื้นที่โดยไม่จำเป็นต้องพึ่งทำเลที่ตั้งที่เหมาะสม โดยในปัจจุบัน ในพื้นที่อยู่อาศัยในย่านมีร้านอาหารเปิดใหม่เกิดขึ้น ซึ่งส่งผลกระทบต่อย่านอยู่อาศัย ในแง่ของการที่มีรถจักรยานยนต์รับส่งเข้าออกเพิ่มขึ้น ก่อให้เกิดการรบกวนผู้ที่อาศัย ดังนั้นการวางแผนและการจัดการพื้นที่เมืองให้เหมาะสมและทันสมัยกับการเปลี่ยนแปลงและผลกระทบจากเทคโนโลยี จึงเป็นสิ่งที่ภาครัฐและท้องถิ่นควรให้ความสำคัญ

Food delivery service plays an important role in modern life and affects consumers’ dining behaviors, restaurants’ operations, and the activities of businesses in the supply chain of food delivery service. In the past years, the pandemic of coronavirus disease 2019 (COVID-19) has catalyzed the growth of the food delivery service business. Since many restaurants cannot fully operate their businesses, customers have to use food delivery service applications to order foods and avoid contacting other people. The growth of the food delivery business has affected the lifestyle of people and businesses, especially in urban areas. Thus, this research aims to examine the impacts of the food delivery service business on the urban changes using the Aree district as a study area. This research examines the impacts of the food delivery service on restaurants service providers and customers in urban economics and suggests implementing study results on urban management in the age of the digital economy and lifestyle. Data used in this study are collected from primary data consisting of (1) questionnaires of restaurants operators and food deliverers, (2) site surveys observing changes in the study area, and (3) interviews with restaurants operators. All data are processed and analyzed using descriptive statistical analysis. The results show that the services provided by food delivery service applications widen the threshold of restaurants’ service areas, increasing the higher opportunity for restaurants to make profits. In addition, types of restaurants contribute to the changes in increasing thresholds and ranges of service areas. Types of foods at the restaurants also relate to the delivery trip distances. Food delivery services also enable restaurants to open their businesses anywhere, no need to be in the most suitable locations. Currently, newly opened restaurants start their businesses in a residential area in the district, affecting the neighborhood with an increasing number of delivery motorcycles going in and out, disturbing residents. Thus, urban planning and management updated and suitable for technological changes and impacts are vital to national and local government.
