Abstract

อุตสาหกรรมสับปะรดกระป๋องนับว่าเป็นอุตสาหกรรมหนึ่งที่มีความสำคัญต่อเศรษฐกิจของประเทศไทย วิทยานิพนธ์นี้เป็นการวิจัยเพื่อหาแนวทางการเพิ่มประสิทธิภาพในกระบวนการผลิตสับปะรดกระป๋อง โดยมีวัตถุประสงค์เพื่อปรับปรุงประสิทธิภาพของสายการเตรียมและการแปรรูปสับปะรด จากการศึกษาพบว่าปัญหาที่ส่งผลกระทบต่อประสิทธิภาพในกระบวนการผลิตได้แก่ ปัญหาลูกสับปะรดที่มีตำหนิที่สามารถสังเกตได้จากภายนอก ปัญหาลูกสับปะรดที่มีตำหนิจากการทำงานของเครื่องปอกตลอดจนวิธีการเจียนตกแต่ง การจิกตาและการบรรจุสับปะรดชิ้นแว่น ซึ่งงานวิจัยได้เสนอแนวทางในการปรับปรุงแก้ไขปัญหาต่าง ๆ ข้างต้น โดยการจัดทำมาตรฐานการปฏิบัติงานและการตรวจสอบเพื่อใช้ในการปรับปรุงแก้ไขปัญหาต่าง ๆ ข้างต้น โดยการจัดทำมาตรฐานการปฏิบัติงานและการตรวจสอบเพื่อใช้ในการฝึกอบรมและควบคุมพนักงานให้ปฏิบัติงานได้อย่างถูกต้องและมีประสิทธิภาพ ตลอดจนอาศัยหลักการศึกษาการทำงาน (Work study) เพื่อปรับปรุงวิธีการเจียนตกแต่ง การจิกตาและการบรรจุสับปะรดชิ้นแว่นซึ่งทั้งหมดนี้ได้นำไปสู่การปรับปรุงอัตราผลผลิตสับปะรด ผลการศึกษาและปรับปรุงพบว่า ปริมาณลูกสับปะรดที่มีตำหนิที่สามารถสังเกตได้จากภายนอกทั้งหมดเฉลี่ยลดลงจากร้อยละ 32.60 เป็น ร้อยละ 15.28 ของปริมาณลูกสับปะรดที่นำเข้า หรือลดลงร้อยละ 53.13 ของปริมาณลูกสับปะรดที่มีตำหนิในอดีต ปริมาณลูกสับปะรดที่มีตำหนิจากการทำงานของเครื่องปอกเปลือกเฉลี่ยลดลงร้อยละ 32.23 ส่วนอัตราการเจียนตกแต่ง (ลูก/นาที,ลูก/คน,ลูก/คน-นาที) เฉลี่ยเพิ่มขึ้นร้อยละ 1.75, 18.23 และ 12.01 ตามลำดับ นอกจากนี้อัตราผลผลิตสับปะรดด้านวัตถุดิบ(กก./ตัน) ด้านแรงงาน(กก./คน) ด้านแรงงานและวัตถุดิบ(กก./คน-ตัน) เฉลี่ยเพิ่มขึ้นร้อยละ 10.03, 32.36 และ 21.03 ตามลำดับ

Other Abstract (Other language abstract of ETD)

The manufacturing of canned pineapple is one of major industries which are important to Thailand Economy. The aim of the thesis was to study the efficiency improvement canned pineapple production which was emphasized on preparation process. The study was found that the major factors affecting production efficiency were pineapple with visual noticeable external defects, pineapple with peeling machine (ginaca) oriented defects and trimming, poking, slices packing method. The research had purposed the guideline of the problem solution via setting up the standard operating procedure, inspection procedure and work study. The results of implementation showed significantly that the number of defected pineapple decreased in production line. The quantity of pineapple with visual noticeable external defects decreased from 32.60% to 15.28% of total incoming pineapples or 53.13% decreased. The quantity of pineapple with peeling machine (ginaca) oriented defects decreased by 32.23% whereas the trimming rates (pine/min., pine/man, pine/man-min.) increased by 1.75%, 18.23%, and 12.01% respectively. Furthermore, raw material productivity (kg./man-ton) increased by 10.03%, 32.36%, and 21.03% respectively.
